the egt is not fast enough, there is to much delay time to utilize it as a accurate montoring tool. However you can replace the probe with a better unit (companies make superior replacements) that make the gauge decent. I see your point in that you dont tune your car but its always nice to have a fast super accurate gauge just in case....
The a/f gauge is useless. You cannot differentiate if you are running 10:1, 11:1. 12:1 or 13:1. It will just show rich for all those readings since you are relying off the narrowband. And we all know the WRX will kaboom at 13:1, but your gauge will still read rich
