I'm glad to get some quick closure to this. I'm not gonna try to get what's left of the car back. I am going to call the Jersey PD and see if I can get some pic's though. I talked to a few guys, one from Jersey, and we figure what the thieves do is, take the car, swap jersey plates on it, get it to Jersey and strip it. Then they put junk tires on it and tow it a few miles away and leave it on the side of the road. They put the original plates back on it so it will easily be picked out and the owner can stop looking for it, and the thieves. The cops can't really do much... except for look for suspicious tow trucks dumping car shells on the side of the road. But who would notice that.
