I have been practicing my heal and toe for about a year. I needed to add some pedal covers to bridge the huge gap of my pedals. (In my car) Heel and toe is not really "heel" it is more Ball of foot and side of foot. You use the ball of your foot to brake and roll the side of the foot to blip the throttle. This is a required skill for track driving to be smooth.
i have to do it like that because of the pedal placement in my car (s13) and how damn tall i am. if i try to do it the traditional way, if you can call it that, then my knees just hit the steering wheel. so it's much easier for me to sidestep it like you.

also, i do it everytime i downshift too, just makes everything smoother
