Yeah, the tuna won't need to be marinated or tenderized. Just thawed, if frozen. Friday night will be fine. All the cured meat and ground beef can be done the night before. Only the steaks need to be prepped a couple days in advance. If you have them in OBX, I can send you a nice rub/marinade formula.
