You could cut a model out of foam, and use that to lay your cloth and resin on top of, later you should be able to cut or sand it away. The flex vs brittle is determined by how much and what kind of resin you use. All my experience with working fiberglass was on 46's in the Marines, but that's how I would attempt something like that.
