Paddle shift is nothing more than the ability to manually "shift" an automatic transmission using paddles on the steering wheel or steering column.
More than likely what you're thinking of is like a DSG gearbox (IIRC the Aston does not use this) which is a double clutch manually operated automatic. The DSG basically has two gearshafts (input shafts?) that are always spinning. Whenever you want to change gears, it simply changes gears, disengages one clutch and engages the other sumultaneously to make it virtually instant.
