If you're going to have a modified car, you need to be able to replace parts that go out. Why don't you buy a new oil pump, and take a stab at it?

Umm...just a stab in the dark but did you check you're level first? If its low, it could be emptying the oil pan out and sucking air for a second, causing the pressure to drop.
