Lol I know what a trials bike is, I learned how to ride on a trials bike and grew up riding them. My dad is huge into trials.
I totally didn't see that ski on the front.
Thought the bike was some monstrosity with a tank track meant to go up and over anything.

I'm going to say the term originated literally from the verb scramble, because that's what the races were called.
Then companies introduced Scrambler models...
