Is there a way to check to be sure? The motor only has like 700 miles on it and if the head gasket is upside down and its leaking the shop that put my motor together is going to fix it.

Theres no way to be sure 100% about that issue. If everything else is new and the temp gauge says its not over heating but yet the over flow tank is boiling and over flowing then to me it sounds like the head gasket. It may of been put on wrong but it may of been put on rite as well. before you had the head installed di you have it milled for a true surface? If the head wasnt true then it wont seal either.

You could always go to NAPA auto parts and buy a combustion leak tester. It's about $15 and works really well.

is it a HONDA thermostat? If it is in wrong, it will cause this. Also bleed the radiator with the front drivers side jacked all the way up at least 20 degrees to get all the air bubbles out.

doing a compression test will help if there is a major leak, or if you have the time you can do a leak down test to see if one cylinder leaks faster. But if you say it takes a bit for it to do it that wont help much. if the head was redone then all I can think of is the head gasket. did they reused the old head studs? I know people that do and dont, Myself I get new ones or ARP's. did they inspected the cylinder walls before installing the head?
