as far as the swap, its as easy as putting the stock motor back for an EG with the LS mounts and throttle cable
your gas mileage for 7psi w/ 93 octane really depends on the type of fuel management you invest in and tuning time.
whether or not you want AC depends on the design of manifold you get and what side of the manifold you decide you run your compressor housing.
