quick thermostat question...
First, when you drain out a good amount of coolant, you have to burp the system when you fill it again. Top it off all you can, close it up and run the car up to temp with the heater on high for a couple of minutes. Let it cool off, then fill it up again. You should do that at least once, if not twice.
Second, removing the thermostat will do one of two things in most cases. 1) The car won't eer get up to operating temperature and it won't burn the A/F mixture completely, resulting in fouled plugs and a smelly exhaust. 2) The car will still overheat because the coolant doesn't sit in the radiator long enough to cool down.

First off, what temperature thermostat are you running? Get a lower temp opening stat, make sure you fill your coolant like they said ridding the system of air locks. Use a 50/50 mix, and add red line watter wetter, it works. If you want to go extreme you can get an aluminum radiator from fluidyne and a kick ass electric cooling fan from spal.

didnt bother to read the whole thread but make sure you vent the system until coolant starts to come out of the vent so you do not get hot spots in your block. what kind of mixture of coolant/water are you using? is there a bunch of shit collecting on the front of your radiator? any coolant leaks? coolant level ok?
