The only reason Square went exclusively with Sony to begin with (like many other third party developers) was because of Nintendo's decision to make the N64 cartridge based for fears of piracy. That decision made it more expensive to develop for the N64 and caused Nintendo's third party support for the system to lose steam.
With the disc based Gamecube, third party developers found an opportunity to work with Nintendo again. The Xbox's online gaming support and power drew third party dvelopers to it's system as well.
Not to mention, both the GC and Xbox were graphically superior to the PS2.
Suddenly, everyone is on equal footing, and third party developers have a chance to maximize their profit.
With Sony looking to prices $500 to $600 at launch, you can bet third party developers, Square Enix included are already looking to Nintendo and Microsoft because they know given the current games sales numbers and inflation all around, that kind of price isn't going to be appealing to the average gamers who bought the Playstation in the past.
BTW, Kojima's been doing a lot of talk about developing for the Revolution. Don't be surprised if you see MGS 4 in some form hit all systems.

personally i think this is all hype because who knows....i think the 360 was rushed out because of all the E3 hype and if it is riddled with bugs and hardware glitches then there are gonna be some unhappy individuals...plus MS is taking a huge gamble with sony....if this lapse in the console release dates gives sony time to revamp the ps3 then MS is in trouble....nintendo i think is about out of gas, aside from zelda i see no other reason to play nintendo
and i highly doubt that if there is a remake of FF7 it would be on any other system but the PS3 i mean hell do you see a tech demo for the 360?nope! i think in the end MGS and FF will remain true to sony....i think its time for Emperor Gates to get his ass beat in something...
and on a side note about the HD-DVD thing....its looking like Sony is winning the war from last i heard a few more motion picture companies came to sony's camp...while it may not be a problem now but it could spell doom for MS if the Blu-Ray is adopted at the Next Gen DVD Format
and on another side note i saw someone asked earlier on if someone has played From Russia With Love...i got the game and i must say im impressed...the graphics are awesome and it stays true to the 60's look and feel...it truly a game worthy of Sean Connery(who came back to supply the voice acting for bond) and the James Bond franchise
