???? The evap canister shouldnt be full of anything. The bottom is open. There is just a mesh/fabric/plastic support bottom that holds the charcoal in.

The cansiter is just used to trap fuel vapors into the charcoal.

The charcoal will just absorb the coolant. You will proabably be just fine after about a week when the coolant will eventually evaporate from the charcoal. Or be consumed by the engine.
